1% Fun

My life right now is 95% work, 2% cleaning, 2% being sick, and 1% fun. The working full-time + going to graduate school full-time + teaching a college English course plan was STUPID. What was I thinking? I only have 1% fun now!! That's not right. I keep telling myself that once it's over I'll be glad I did it. And I only have about 11 weeks of this left...except now that I type it out, that still sounds like a really long time. Anyway, I don't like this at all.

But, that 1% fun is there at least. Thankfully I have a fun husband and a fun kitty and fun friends. I did manage to decorate and make an icebox cake for Dave's birthday, I watched some of the Olympics (see photo below of me and Moxie watching together), and Moxie's cuteness makes unfun things (like being sick) seem just a little more fun.

Oh, and Valentine's Day was quite fun. We saw Macbeth at the Guthrie and Rebeccas at The Heights Theater and ate some marvelous food. And we did have some nice evenings with friends in February as well. So, maybe it's more like 1.5% fun.

Such cute pictures. Especially Moxie. She's such a good kitty. We were over spending some time with her today and she was as cute as could be.

Stop being so busy, okay ? We'll, maybe in 11 short weeks. Then you can get outside and enjoy your own yard. mom

JoJo, it's a very simple recipe...which is why I had time to make it :) I think Alice would have fun helping with this.

3 cups heavy whipping cream, 3 tbs white sugar, 1 tbs vanilla. Whip that up until soft peaks form.

It calls for a kind of dark chocolate wafer cookie called Famous Wafer Cookies. I don't know if you can get those in UK, but probably any thin cookie will do. Because of the cream, it would be best to get something not super sweet. And it has to be thin, so it gets soft overnight. Probably dissected Oreos would do, if you have access to those.

I put 7 wafers on the bottom and spread with cream. Then continued building in that fashion until the cookies were gone. I think it came out to about 7 layers?

Then just pop into the fridge overnight. The cookies become soft, like very thin layers of cake. It's really almost too yummy for me...I wanted to eat the entire thing.

I know you have no time, but just so you know I have given you a happiness award over at my blog. It is more about acknowledging some of the blogs I enjoy reading, so dont feel pressured to do the 'tasks'. Or just make the list, that would be interesting to read!
